Alkaline Kee Chang (Kan Sui Chung)

It takes me almost 3 months to add the recipe for this Alkaline Kee Chang.  I hope its not too late for the upcoming "chung" festival. I think i have to get ready to make some salted duck eggs, i mean i need the duck egg yolk to make bak chang for the festival too. This is another secret recipe from my dearest mama. I like this alkaline dumpling very much and i hope you will like it too. Enjoy!!
Alkaline Kee Chang ( Kan Sui Chung)

   Ingredients    :


   2 1/2    cup glutinous rice
   2          teaspoon alkaline water
   1          teaspoon borax ( peann sar)
   bamboo leave
   hemp string or plastic string
   

    Method   :

    Soak glutinous rice for 4 hours and drain. Dissolve alkaline water and borax to marinate for another 
    2 - 3 hours.

    Boil some water and blanch the bamboo leave for about 10 - 15 minutes. Remove and clean the leaves
    with paper towel. Set aside.

    Wrap the rice and tie it with hemp string. Wrap about 10 -12 dumplings in a bundle. You may follow 
    the steps of wrapping from my bak chang recipe.

     When the water is rolling boil, gently put in the dumpling into the pot bundle by bundle. Let it boil
     for  3 hours. remove from water and hang it to dry.

     Serve with white sugar or palm sugar syrup.
