Curry Yogurt Lamb

Curry Yogurt Lamb
    
     Ingredients   :

     1 1/2         pound lamb shank or shoulder (clean and cut small pieces or cubes)
     1 - 2          cinnamon stick
     1               big onion
     2               oz ginger
     1/4            water
     3               teaspoon curry powder
     1               teaspoon chili powder
     3               dash coriander powder
     2               dash cumin powder
     1/2            teaspoon salt
     3 - 4         teaspoon tomato paste
     3 - 4         teaspoon plain yogurt
     3 - 4         teaspoon coconut milk 
     4 - 5         teaspoon cooking oil
     


     Blend onion and ginger with water - set aside


      Marinate lamb with  :

     Curry powder, chili powder, coriander powder, cumin powder and salt for an hour or more.

      Method     :

      Heat a deep skillet or wok with medium heat and add cooking oil, stir in the mixture and 
      cinnamon stick to cook until it becomes lighten but not brown about  8 - 10 minutes, add in the
      lamb and fry for 3 - 5 minutes. Cover with lids and  reduce the heat to low. Simmer for 10 minutes.
      Stir in the coconut milk, tomato paste, plain yogurt, fry/ mix and cover back
      the lid to simmer for another 45 minutes or more until the lamb in tender. Stir occasionally.
      When the lamb is tender add a pinch of salt and cook for another 5 minutes. Remove cinnamon
       stick and serve with rice or nasi briyani. Enjoy!!
