Pineapple Tarts


  Ingredients  :

  A.
  Pastry  :     1 1/2  pound  flour
                    8  oz  unsalted butter
                    8  oz  salted butter
                    3 - 5   teaspoon water        
                    1        egg
        

  Pineapple Filling / Jam  

  2        large pineapples (grate the pineapple fine,pulse in food processor until fine)
  2        cups sugar  
  1   egg yolk + 1/2 egg white for glaze

  Combine all A ingredients, make as dough and keep in the fridge to chill for half an hour.
  Heat up a large non stick wok skillet,put in all the ingredients in the skillet,always stir and check
  when cooking the pineapple jam,let it cook until thicken and becomes brown. Let it cool.

   To make the Tarts   :

  Roll out the chilled pastry to 1/4 - 2 inches (sizes as desire) and cut with pineapple mould.
  Space and arrange the Tarts at the baking tray, brush and glaze, place the pineapple jam in the middle
  and add with a design. Glaze it again and bake in oven for 15 - 20 minutes at 370 F.
