Mild And Sour Oxtail Soup

    Ingredients    :

    11/2        pound oxtail, remove fats and cut 2-inches chunks 
    5             cup water
    1             can beef broth
    1/2          teaspoon peppercorn, slightly smashed
    1             can tomatoes diced
    1             can salsa tomato sauce ( 8 ounces can)
    1             onion, peel and cut wedges
    2             carrots,  peel and cut wedges
    3             large potatoes, peel and cut wedges
    1             stalk celery, trim and cut wedges
    2             tomatoes, clean and cut wedges
    2             sprigs parsley or cilantro ( optional)
    11/2        teaspoon salt
    1/2          teaspoon sugar

    Method     :

    Blanch oxtail in hot water for 5 - 8 minutes. In a pot boil water till rolling boil, add in peppercorn, 
    oxtail, onion, tomatoes, carrot and celery. Open can and pour in salsa tomato sauce, tomatoes diced.
    let it boil on high heat for 10 - 15 minutes. Reduce heat medium to low and close lid, let it simmer for
    20 minutes. Add in the potatoes, continue to simmer the soup for another 20 - 30 minutes. (The longer
    simmering the soup will taste better)

    Add in salt and sugar to taste. Serve with garlic bread or with white rice.
