Ipoh Pak Chit Kai aka Blanch Chicken

    Ingredients     :

    1       whole chicken, approximately 2 pounds
    1/2    teaspoon peppercorn, slightly smashed
    3       sprigs cilantro, green onion or both, wash, trim and cut 3-inches length
    1       can mushroom
    3       ginger slice
    15     cup water
    11/2  teaspoon salt

     Method     :

     Wash chicken and set aside. Boil the water in a pot with peppercorn,when the water is rolling boil put
      in the chicken and close the lid. Adjust the heat to the lowest and let it simmer for 35 - 45 minutes
      or poke in a chopstick, if chopstick easily poke through means chicken is cooked.

      Gently remove chicken from pot and use a plastic foil to cover the chicken. Is to avoid chicken skin
       becomes dry. Leave chicken to cool before chop or cut.

      Add can mushroom and salt into the chicken soup. 

      Garnish cilantro and green onion to top of the chicken.
