|Sweet And Sour Cucumber|
2 large cucumber, wash, core and cut thin slices
100g lean pork or pork belly
1 red chili, discard chili seeds and cut thin slice
2 sprigs cilantro, trim and cut 3-inches length
3 ginger slice
2 cloves garlic, peel and cut thin slice
1 stalk green pepper powder, trim and cut 3-inches length
11/2 teaspoon oyster sauce
2 tablespoon sugar
2 tablespoon distilled vinegar
1/2 corn starch, add 2 tablespoon water
2 dash of pepper powder
Mix cucumber with sugar and distilled vinegar for an hour or more. I leave in the fridge overnight.
Marinate pork with 1/2 salt and 1/2 corn starch.
Remove cucumber from vinegar juice. Set aside, keep the vinegar juice for later use.
Heat wok on high heat, add oil, ginger and garlic slice to fry till fragrant. Add pork and continue to
fry till brown, add cucumber slice and chili slice. Stir-fry for about 1 minute.
Add oyster sauce, pepper powder and cilantro. Stir in corn starch water and combine everything with
