|Baked Shrimp Scampi|
1 pound jumbo shrimp, clean, de-head and butterfly, on your choice with the tails on
5 tablespoon white wine
2 tablespoon live oil
1/2 teaspoon ground black pepper
2 teaspoon fresh squeeze lemon juice
1/2 teaspoon grated lemon zest
3 ounces unsalted butter, at room temperature
3 cloves garlic, minced
3 dash of crushed red pepper flakes
2 bulbs shallot, minced
1 egg yolk
1 sprigs rosemary, minced
1 sprigs parsley, finely chopped
1 teaspoon salt
Preheat oven to 425 F. In a bowl, marinate the shrimp with pinch of salt, 2 tablespoon of olive
oil and 2 dash of black pepper powder. Set aside.
In another bowl, add in garlic, shallot, lemon juice, lemon zest, rosemary, parsley, crushed red pepper
flakes, egg yolk, butter and combine everything.
Arrange the shrimps on a baking tray and, sprinkle some salt and ground black pepper on the
shrimps. Apply/pour the marinate mixture on top of the shrimps and place it in the oven to bake for
13 - 15 minutes.
Garnish with asparagus or lemon wedges at your choice.
