Mixed Fruit Punch Cocktail

I've been having this Mixed Fruit Punch Cocktail recipe since I was a teenage. If I'm not mistaken I got this recipe from one of my sisters. The ingredients are very simply, just fruits and juice. I modified a tiny bit by adding in more fruits and gelatin. As for the red wine or any kind of wine, it is depending if you like it or not. It is very refreshing. I like to add a lot of watermelon. It is definitely very suitable for parties or after a heavy meal. I just love it.
Mixed Fruit Punch Cocktail

   Ingredients    :

   Any kind of fruits at your wish, I used : -

   Watermelon, cut small cubes
   Cantaloupe, cut small cubes 
   Pineapple, cut  small cubes
   Strawberry, cut small cubes
   Apple, cut small cubes
   Kiwi, cut small cubes
   Agar - agar, cut small cubes
   Red wine - 2 tablespoon ( you can omit this)

 *Pineapple, cut small cubes
 *Water - 1   cup
 *Sugar - 1/2 cup
  ( Boil all * ingredients on low heat for about 10 minutes, remove and leave it to cool)


   Method    :

   Into a big glass jar/bowl, dump in all the cut fruits and pour in the pineapple sugar juice.

   Add orange juice or any kind at your wish. I sometimes used Ribena juice.

   Gently mix well everything equally, place it in the fridge before serve.

Indonesian Layer Cake ( Kueh Lapis)

This Layer Cake is my four thousand gold favorite snack. I know why, they love the peeling part of the cake while eating it. Somehow, i noticed this cake is nice to be eaten in small pieces. Not only them, perhaps I believe no one can refrain from the aromatic and rich in flavor dessert like this. It definitely stands for a very important part during tea time. It needs a lot of time and patience to do this therefore it is not a ordinary cake. This time i was a bit rush therefore I'm using 2 baking trays to make this instead of one, or else you would be able to see more layers. Tell you what this picture that you are seeing right now, actually the cake are all gone, my daughters gobbled all at the same day. They just can't stop eating it. Try it out yourself and you will know!


Indonesian Layer Cake ( Kueh Lapis)

   Ingredients    :

   220 g  castor sugar
   360 g  unsalted butter, soften
   110 g  all purpose flour, sifted 
   16       egg yolks
   6         egg whites
   2         teaspoon five spice powder
   2         teaspoon rum or brandy
   2         teaspoon condensed milk
   1         teaspoon vanilla essence
   1/2      teaspoon baking powder
   extra butter to grease the baking tray


    Method    :

    On high, beat egg whites, castor sugar and vanilla until soft / stiff peaks. 

    Add butter, condense milk and egg yolks in 3 - 4 separate batches until glossy and thick.

    Fold in five spice powder, flour, baking powder and rum/brandy 3 - 4 separate batches. Mix well.

    Scoop out about 1/2 cup of the cake batter and spread it on a grease baking tray evenly all over even
    the edge.

     Preheat oven and select to grill function and grill cake batter, layer by layer until cake batter is done.
     When the cake is ready, leave the cake in the oven at 330F for about 5 minutes.

Baked/ Grilled Honey Chicken Wings

My favorite of the favorites, chicken wings. It is definitely my first choice and I will never get tired of eating it. I still remember when I first saw my friend from Washington who uploaded this yummy and delicious chicken wings on FB, I wanted to beg her for the recipe. It was so juicy and tempted when looking at the picture.

I really want to Thank my friend, Lynn for sharing this wonderful recipe with me. I omit one of the ingredients and glaze some honey before putting it to bake. I can say the taste of this chicken wings reminds me of Ah Wah chicken wings from Jln Alor.  I'm very happy, in the future or from time to time when I crave for Ah Wah grill chicken wings  Hahaha!!!  I can actually make something similar to it. Wow!!!

Baked / Grilled Honey Chicken Wings

   Ingredients   :

   15     chicken wings, washed chicken
   7       bulb shallot, peeled and cut slice
   6       cloves garlic, peeled and cut slice
   1/2    ounce ginger, peeled and cut slice
   1/2    teaspoon salt
   1/2    teaspoon pepper powder
   31/2  tablespoon sugar
   5       tablespoon light soy sauce
   1/2    teaspoon dark soy sauce
   3       tablespoon honey


    Method    :

    Pat dry the chicken with paper towel, marinate chicken with all the ingredients for 8 hours or more ( i 
    leave it in the fridge for overnight)

    Remove the marinated chicken wings form fridge and and preheat oven to 400 degrees F. 
   
    Brush wings with honey before putting in the oven to bake. Let it for about half an hour and turn to 
    the other side and let it bake for another 20 minutes.

    Serve while its hot an don't forget to drink lots of water. Enjoy!

Turmeric Chicken Curry & Turmeric Rice (Nasi Kunyit)

This picture was taken in January during my youngest daughter's 4th birthday party. I threw a birthday party for her and invited a lot of guests. If I'm not mistaken, roughly about 50 peoples. When I send out an invitation, they will bring alone their whole family. Let say if someone were to invite me for a party I will definitely bring along all my kids. Lets make a big group and have fun, the kids can play Let's Dance or Wii games while the adult can sing karaoke. I like the crowd and laughter, eventually my house will have party at least once or twice a year. This time I cooked the chicken curry with more gravy. It is very tasty to put over the Turmeric rice. I previously cooked a very nice dry chicken curry too. Check it out more at this blog.
Kunyit Chicken Curry & Nasi Kunyit
   Ingredients   :

   1              whole chicken approximately 2 - 3 pound, cut into pieces
   2              ounces of fresh turmeric, peeled  
   5 - 6         potato, peeled and cut wedges
   1              teaspoon turmeric powder ( if you don't have fresh turmeric add another 2 teaspoon)
   2 - 3         tablespoon curry powder
   2              teaspoon chili powder
   2 - 3         teaspoon salt
   2 - 3         teaspoon sugar
   3              dash pepper powder
   1/2           teaspoon coriander powder
   1/2           teaspoon cumin powder
   2 - 3         anise star
   2 - 3         lemon grass, trim and smashed
   5 - 6         fresh curry leaf
   3              cloves garlic, peeled
   6 - 8         bulbs shallot, peeled
   1              cup coconut milk ( i use 2 cup fresh milk)
   5 - 6         cup water
   3 - 5         tablespoon cooking oil

   Blend together  :
   Fresh turmeric, garlic and shallot, set aside

   Marinate the chicken with   :
   Turmeric powder, curry powder, chili powder and 1/2 teaspoon salt for  an hour or more, set aside

   Method   :

   Heat up the wok and fried the potato until the side turns brownish. Remove from wok, remain the oil
   in the wok, use back the same oil to fry the blend mixture for until the it becomes lighten or aromatic.

   Add in the marinated chicken and fry for 5 - 8 minutes, longer frying the curry chicken will become
   red and oily. Pour in the water or fresh milk, salt, sugar, pepper powder, cumin powder, fresh curry
   leaf, coriander powder, anise star. Close lid and let it simmer for about 20 - 25 minutes. Open lids, add
   in the fried potato and let it cook for another 2 more minutes. 
   Pour in the coconut milk, lower down the heat, slowly stir and mix well until everything combine. 
   Off stove and your delicious Turmeric Curry Chicken is serve.
