Here I present to you the most fulfilling and very nutritious breakfast, Peanut Butter and Cheese Stuffed
French Toast. To be honest, this is not my breakfast, hehe!! it is actually my tea.
Can't believe it I'm actually craving for breakfast at the noon time. Luckily I have plenty of breakfast ingredients in my  pantry and I can say my house all year long always has milk in my fridge. It makes my day, and I love it.
Peanut Butter and Cheese Stuffed French Toast
   Ingredients   :

   2    slices white or whole grain bread
   1    tablespoon milk
   2    eggs
   butter to cooking spray

   Method    :

    Into a bowl, beat the eggs, add milk. Mix and stir well.

    Heat a none stick pan on medium heat, melt the butter in the pan or use cooking spray to grease the 
    pan before putting in the bread.

    Dip bread into the egg mixture until both sides coated and covered with eggs. Don't leave the bread 
    slice in the egg mixture for too long.

    Gently place the slice bread on the frying pan and cook until it it turns golden brown. Flip and fry the
    the other side of the bread until golden brown.

    Serve immediately with maple syrup or confectioners and don't forget the milk.

Fried Eggs with Shrimp
My family and i are egg lovers, we can eat eggs everyday. Eventually i can use up to 8 - 9 dozens of eggs in one months time for cooking and baking. Eggs are very useful and it can make a lot of different dishes. Try this: Fried Eggs With Shrimp. Delicious and easy meal, can never go wrong. My 4 year old daughter loves it the most!!!
   Ingredients   :

   3       eggs
   6      shrimps, clean and cut into two pieces, add 1/2 teaspoon sugar
   1/2   onion, cut into small cubes
   1/2   teaspoon green onion
   1/2   teaspoon salt
   3      teaspoon water
   2      drops of sesame oil 
   2      teaspoon vegetable oil 
   pinch of pepper powder
   green onion for garnishing


   Methods   :

   Crack eggs into a bowl, slightly beat for a while.

   Add shrimp, onion, green onion, salt, water, sesame oil, pepper powder. Mix well.

   Heat up the wok, add vegetable oil, gently stir and pour in the egg mixture in the wok.
  
   Fry till cook both side, dish up, garnish with some green onion and serve.

Good in nutrition, delicious and yet easy to make dish.
Hong Kong-Style Tomato Shrimp Fried Eggs
    Ingredients    :

   1       large tomato, cut small wedges
   3       shrimp, peel and deveined, cut all the way through into two pieces, add 1/2 sugar for crunchier
   3       large eggs, crack in a bowl
   1/2    big onion, peel and cut small cubes
   1       stalk green onion, trim and cut small cubes
    3      tablespoon vegetable oil
   1       teaspoon salt
   3       dash pepper powder
   


    Method    :

    Slightly beat and mix the eggs in the bowl, add salt, pepper powder and sugar. Set aside.

    Heat the wok with 2 tablespoon oil on medium to high heat, add onion to fry till fragrant. 

    Add in the shrimp to fry for 10 seconds. Stir in the eggs to fry, add in the balance 1 tablespoon oil
    to fry the eggs. 

     Add in tomato wedges and mix and fry everything until combine. Turn and fried until both sides till 
     brown.

     Dish up and sprinkle green onion on top and serve.

Braised Pork With Eggs

I am serving this today cause I woke up late this morning. Luckily I have defrosted some pork shoulder last night. I decided to make this dish cause it does not require much time and extremely easy to prepare.
Sometimes if I am running out of ideas or ingredients, this dish will make a very delicious and suitable one-dish meal.
Braised Pork With Eggs
   Ingredients     :

   1           pound pork shoulder, cut into pieces
   5           hard boil eggs
   1 - 2      anise star
   1           whole garlic, wash
   2           stalks green onion, wash and trim
   1/2        cup water
   3           drops dark sauce
   1/4        cup soy sauce
   4           dash pepper powder
   1/2        teaspoon oyster sauce
   1/2        teaspoon sugar
   1/4        teaspoon salt
   1           teaspoon vegetable oil
   1/2        teaspoon corn starch, mix with 2 tablespoon water

    Method   :

    Boil water in deep skillet or pot, add in pork, anise star, whole garlic, green onion, water, dark
    sauce, soy sauce, pepper powder, oyster sauce, sugar, salt and oil.

    Let it simmer in the pot for 10 minutes, peel the shell of the hard boil eggs and add into the pot to 
    simmer for about 30 - 45 minutes.

    When the braised pork is ready stir in the corn starch mixture and serve with white rice.

    (You may also use slow cooker or crock pot to cook this)

   Ingredients   :

   10         fresh small size oyster, soak and drain out water
   5           green mussel, wash and removed shell
   2           large eggs
   1/2        cup water
   1/2        teaspoon light soy sauce
   1           teaspoon salt
   1/2        teaspoon sugar
   1/2        teaspoon fish sauce
   2           teaspoon tapioca flour
   1           teaspoon rice flour
   1/2        teaspoon pepper powder
   1           teaspoon minced garlic
   2           tablespoon chopped chives
   1           stalk green onion, minced
   1           sprig cilantro for garnishing
   4           tablespoon cooking oil

    Method    :

    Mix water with tapioca flour, rice flour and pinch of salt into batter. Set aside.

    Crack eggs into a bowl, do not beat only stir/mix well, add in light soy sauce, salt, fish sauce, pepper  
    powder, minced garlic.

    Heat up the a wok or non stick pan to high heat and add in cooking oil, pour in the batter on the wok,
    fry and stir it for awhile and pour in the egg mixture.

    Continue to fry and combined everything in the wok, sprinkle in chopped chives and green onion.
    Stir well and dish out the omelette and serve with chili sauce.

Turmeric Fried Rice (Nasi Goreng Kunyit)

This is one of the dish that my mom cooked for me during my confinement, suddenly I miss her so much. "Mommy I miss you so much" she might not be able to hear me now but I'm grateful with a press
on the phone, I can reach her right away. We live far apart, she is oceans away, eventually I talk to her ever alternate day, sometimes even twice a day. She is like staying nearby to me. Trust me, this is one of the extremely prefect tasty confinement dish but of course you also can eat even you're not on confinement, like me now. 
Turmeric Fried Rice
   Ingredients   :

   1        bowl of leftover white rice
   1        knob 2-inches fresh turmeric, cut thin slices ( or 11/2 teaspoon turmeric powder)
   1        knob of ginger approximately 11/2-inches 
   1        stalk green onion (cut slice)
   1/3     cup green bean
   1        1 egg
   50      gm chicken meat (cut cubes)
   1/2     sugar
   1/2     light soy sauce
   1/2     salt
   2-3     dash pepper powder
   2-3     teaspoon cooking oil

   (Marinate the chicken with a little bit salt, dash of pepper powder, 1/2 turmeric powder)


   Method     :
  
   Slowly fried the fresh turmeric and ginger with cooking oil on medium to low heat until aroma.

   Add in the chicken and adjust the heat to high, fried until it turns golden brown. Pour in the rice mix 
   well and fried for a while. Push the rice at the side of the wok/skillet and crack in the egg in the middle.

   Fried the rice until it become lighten and dry, dump in the green onion, fried for another 3 -5 minutes.
   Served while its hot. You may add a fried egg on top if the fried to serve.

Macaroni Soup With Ham And Egg (Hong Kong Style Breakfast)

 A very famous and popular Hong Kong style breakfast, Macaroni Soup With Ham And Egg Soup. A lot of Hong Kong people like to eat macaroni, i have noticed that. During my visit to Hong Kong in 1997, eventually we were eating this every morning. Not only this, i remember their ketcup pork chop is very tasty too. I was staying at Diamond Hill nearby Wong Tai Sin Temple. There is a cafe across the street where we go there for breakfast and lunch sometimes for dinner too. 
Most of the Hong Kong people prefer to eat out rather than cooking at home cause their kitchen is very small, the laundry room is located at the kitchen and they even need to hang their clothes on the small balcony right next to the kitchen. However this is a memorable visiting, i was staying at their house for 3
nights, emmm !! I kinda of miss them now, those were the days, before i got married and got my own family. My daughters always request this for breakfast. I believe your children will like it too.
Macaroni Soup With Ham And Egg ( Hong Kong Breakfast)
   
   Ingredients    :

   11/2        cup macaroni
   3             slices of ham
   3             large eggs
   2             can chicken broth
   1/2          cup water
   1             stalk green onion, trim and cut small into small pieces
   1/2          teaspoon salt
   1/2          teaspoon pepper powder
    

    Method    :

    Open can, pour chicken broth and water into a pot. Add in the macaroni, bring it to boil and simmer 
    on low heat for 15 minutes until macaroni becomes soften.

     While simmering the macaroni, fry ham and eggs. Set aside.

     Ladle the macaroni into three separate bowls, place ham and egg on top of the macaroni.

     Sprinkle green onion and serve.

Step-by-step Homemade Salted Eggs


There are a lots of methods of doing salted eggs, i only use two methods, the convention way is to soak it into the salty water however I still find that the method that my friend from New York taught is more convenient. Thanks Melissa, the eggs turned out very successful, I like it very much. It is very easy to make and not much of ingredients is needed. The marinate will take almost a month. Some like to make it with duck eggs but I personally thinks that chicken eggs makes a better salted eggs, the reason I like use chicken egg is because chicken egg white is softer than duck eggs. If I am making glutinous rice dumpling, I will make salted duck eggs cause the salted duck egg yolk is more harder than salted chicken egg yolk. Not only that the duck egg shell is harder than chicken egg so will need couple more days to marinate compare to chicken eggs. To know that the salted egg is ready or not is when boil it, if the eggs that are still floating means they are not yet ready. I like to eat salted eggs because it is very easy to cook,
can boil it or steam in the rice cooker.
Simple Ingredients To Make Salted Eggs

Pour the salt into a bowl


Dip the egg into the liquor (V.S.O.P) until well coated


Roll the egg over the salt 

Must be fully coated with salt

Put it into a  clean dry glass jar


Dip, roll and put the eggs into the glass jar


Pour some salt on top of the eggs

You can use a plastic foil to wrap the jar before cover the lid,
All set, the yummy homemade Salted Eggs will be ready in 28 days, for better result is to keep it around 30 - 35 days.

Egg Mayonnaise Sandwich

   Ingredients   :

   1     Loaf of white/whole grain bread
   5     Hard boiled Egg ( but not prefectly hard,i prefer the 98 % cook)
   2-3  Tablespoon mayonnaise (i use Japanese brand)
   4     Dash of pepper powder
   A pinch of salt


   Method    :

    Crack the egg and peel the shell, wash and wipe with paper towel, smashed the eggs with a folk
    (i prefer not to 100% smashed especially the egg white), put in the mayonnaise, pepper powder
    a pinch of salt, mix and combine it well. You can prepare this the night before, put it in the fridge.

    Spread some butter on the bread and spread some egg mayonnaise to it. Top another slice of bread,
    it must be cover the entire slice of bread, crust to crust, side to side, top to bottom.
    Continue the above steps with the rest of the bread. Trim/cut the crust of the sandwiches and cut 
    half diagonally. To avoid soggy bread i omit the tomato and lettuce.

Hong Kong Flaky Egg Tart

Egg Tart is one of the famous dessert in Hong Kong, there is two version of Egg Tarts, the flaky and crunchy pastry comes from two types of doughs which is water dough and oil dough. Another one is just the regular butter dough which is easier to make.
 I was born and raise in Ipoh, there is one famous Egg Tart stall you must try, it is located at Kg.Simee market, they are very famous with Egg Tarts and Kaya Puffs. Yummy !!!



Hong Kong Flaky Egg Tart

    Ingredients    :

    Water Dough
    
   250   gm  cake  flour
   1       egg
   1       teaspoon sugar
   120   gm water



     Oil Dough     :

   250   gm all purpose flour
   300   gm softening / lard


    Egg Filling     :

   1      cup egg (approximately 4-5 eggs)
   11/2 cup water
   2/3   cup sugar
   3      tablespoon evaporated milk
   1      dash vanilla extract

   Method      :

   Combine water and sugar in a small pot and cook until the sugar completely dissolved. Let it cool.
   Beat eggs and strain it. Stir in the sugar syrup,evaporated milk and vanilla extract. Strain again the
   mixture through a sieve to prevent lumpy.

   Prepare the water dough and oil dough in two separated bowls and place them in the fridge until firm
   and solid. Roll out the water dough into rectangle sharp. Roll out the water dough into rectangle sharp.
   Place the oil dough on top of the water dough and fold over both sides to overlap and roll out flat.
   Fold the pastry into quarters and roll flat. Roll the pastry into quarters and roll out flat. Repeat this
   twice. Put it back into the fridge for 1/2 an hour or more.
   Roll out dough to 11/2-inches and divide the dough and press into the tins, make sure it covers the
   bottom. Push it higher than the sides and use your fingers to shape the edge.

   Fill the tarts 8/10th full and bake for 25 - 30 minutes in a 350F preheated oven until the tarts edges is
   golden brown.

Steamed Marble Egg Cake

I can't believe Steamed Marble Egg Cake can actually turn out to be so beautiful and yummy, i seldom steam cake, usually bake. I think in the future i will try the steaming method more frequently. It is a very easy way for those who don't have an oven. I referred to Samm's Butter Cake Recipe :) and she is one my longest friend, Samantha. Please show some love to her blog too! The only changes I've made from her recipe by replacing the Toblerone Chocolate to Hershey Syrup because I didn't have any chocolates to begin with except Hershey Chocolate Syrup in my refrigerator. So I gave it a try and wow, I never thought it would turn out just as good and my four thousand golds loved it so much. I hope you will like it too.
Steamed Marble Egg Cake
Ingredients:

A)   280   gm unsalted butter
       240   gm sugar
B)   4       eggs
C)   300   gm flour ( Sieve)
       21/2  tablespoon double action baking powder
D)   5 teaspoons of hershey chocolate syrup (you can put more if desired)


Method:

1.Grease baking liner, beat A in a mixing bowl until it become light yellow.
2.Add B, cream and stir well between every egg. Add C, mix well until combined. 
3.Add D, but don't put everything in,only partial ( 2tsp of hershey chocolate syrup). Pour cake batter in greased baking liner and add the balance of D then take a spatula or fork to mix it a bit. This will make
the cake have a marble look.
4.Steam batter in a steamer at high heat for 60 minutes. Can be served warm or cold.

Chives Fried Egg

I have grown some chives in my backyard,this is a hassle free plant as it requires not much of attention at all. I like to fry it with eggs, especially when i am eating porridge. Today, hubby requested for Teochew porridge "chew chau chuk". Basically, it doesn't need much work to make this dish and it's so easy to prepare with only eggs and chives. Simple homemade dish!

Ingredients :
3 eggs
5 oz chives (can put more if desire)
1 tsp water
1 tsp oil
1/2  tsp salt
1/4 sugar
2 drops light soy sauce
2 dash of pepper powder
2 drops oil (put in the eggs)

Method :
Beat the eggs in a bowl and add all the ingredients except the 1/2 tsp oil(it is for frying later).
Heat the wok to medium heat,  add oil and pour in the egg mixture. Fry the egg to cook on both sides.
