Mixed Fruit Punch Cocktail

I've been having this Mixed Fruit Punch Cocktail recipe since I was a teenage. If I'm not mistaken I got this recipe from one of my sisters. The ingredients are very simply, just fruits and juice. I modified a tiny bit by adding in more fruits and gelatin. As for the red wine or any kind of wine, it is depending if you like it or not. It is very refreshing. I like to add a lot of watermelon. It is definitely very suitable for parties or after a heavy meal. I just love it.

Cheese & Fruit Kabobs

Fruit Kabobs will be everyones favorite at a party especially during this season, summer. At the request from my daughters i made this yesterday for their birthday party. Why they, is because my eldest Julia and Jocelyn's birthday falls on the same week therefore we might as well celebrate it together.
I use mozzarella instead of all fruits on a stick. The fruits was so fresh and sweet plus the mozzarella was gummy and delicious, it makes a great matching.

There isn't particularly what is the ingredients, all you need is to pick your favorite fruits or any of the fruits of the season and stick it on a stick. Trust me that will make a good combination. No one can refrain from this. Thumbs up!!!

Mixed Fruits Crepes

Mixed Fruits Crepes
Today I was suddenly craving for crepes, I really do miss the crepes stall which is next to the oriental market at Chinatown, oh yeah! their name is Q-cup. They are a Taiwan franchise company and the owner is a very nice guy, he always put on a big smile. But too bad, they chose to close this location and only maintain the other location which is quite far form my house. I miss their Taiwanese snacks like crepes, popcorn chicken and bubble tea drinks but now they are gone. Hemmm!! you never know, maybe I will make a trip to their new stall.
Making crepes is not very hard, is like how you make pancakes. You may not specifically need a crepe pan, any non stick skillet or pan will do. You can prepare different kinds of crepe fillings like mixed fruits with whip cream or nutella with banana slices or just sprinkle confectionery sugar and enjoy it like a snack. I have another version of doing this is to put with lettuce, ham, sweet corn and mayonnaise but this will be the warm version crepe. Trust me it is very delicious too.
Mixed Fruits Crepes
   Ingredients     :

   3/4          cup all purpose flour
   3             tablespoon melted butter
2             teaspoon rum or brandy ( i use VSOP)
   1             teaspoon sugar
   1             egg white
   2             egg yolks
   1/3          cup milk
   1/3          cup ice water

    Method    :

Gather all the ingredients, in a mixing bowl, crack and whisk the eggs, add all the ingredients and
   whisk all ingredients until combine.

Pour the ingredients in a blender and blend it on high speed for 30 seconds.

Pour into a container and place it into the fridge for an hour.

   Cooking the crepes    :

Grease the non stick pan and put it on medium to high heat.

When the pan is hot, pour a scoop of batter into the pan, remember as you pour the batter twirl the
pan around. The batter will coat the pan when your twirl it. If there is holes, add in some batter to fill
   the gaps.

Do not over cook or brown the crepe. To see the crepe cook, it will changes in color and can be easily
easily lifted up from pan. Slowly use a spatula to slip under the crepe or you can even use your finger
to pick it up from the edge of the crepe.

Flip the crepe over and cook the other side for 30 seconds, slowly slip the crepe on a serving plate
and add mixed fruits and ice cream or any filling of your choice. Fold the crepe over the fillings and
top with whip cream, chocolate syrup or sprinkle with confectionery sugar.

   Serve immediately.

   Enjoy!!!

Ipoh Spicy Fruits Salad ( Rojak)

Spicy Fruits Salad ( Rojak) is a cold salad and rojak in malay words means a mixture of everything. Typically it consists mango, cucumber, pineapple, jicama (sengkuang). Mixed with all crunchy fruits and added with spicy, sweet and sour shrimp paste sauce. Actually rojak taste better when added in cooked squid (sotong) and crispy prawn crackers. But thats alright this bowl of rojak is more than enough to satisfied my craving. It is very delicious and refreshing, if you like salad, i believe you will like it too.

Mixed fruits, cucumber, mango, jicama and pineapple

Ipoh Spicy Fruits Salad ( Rojak)
   Ingredients   :

1         cucumber ( i prefer small one with less seeds)
   1         jicama / sengkuang (small)
1         mango ( unripe, prefered light yellow but crunchy)
1/2      pineapple ( trim and cut)
1/2      cup ground peanut ( roasted and smashed)
1         teaspoon sesame seeds ( roasted and smashed)
1         tiny small cube of belachan/shrimp paste ( toasted and smashed)
since i don't have the rojak keropok i substitute it with rice noodle ( i use La Choy crunchy noodle)

To prepare the rojak sauce   :

   3         tablespoon thick prawn paste/har ko ( i used C.K.C brand)
   2         tablespoon plum sauce
1 - 2    tablespoon chili sauce ( depends on how hot you want)
1/2      teaspoon sugar ( dissolve in 2 luke water)
( in a bowl, combine all the sauce ingredients and mix well. set aside)

  Methods      :

Wash and cut all the fruits into bite-sized and toss is a bowl with the some rojak dressing. I usually
make a small individual portion at a time. It is better if the rojak consume right after you mix it or else it
will become watery. Mix the fruits in a clean/dry mixing bowl and toss well.
Sprinkle with roasted ground peanut,  roasted sesame seeds and toasted belachan ( shrimp paste)
and La Choy crunchy noodle on top of the salad and serve.
Place the cut fruits and rojak sauce into separate containers to keep it for later.

   Enjoy!!!
