Boiled Butter Sweet Corn

Actually, I prefer just boiling the corn to eat but then I'm craving for this Boiled Butter Sweet Corn today. I remember when I was young my parents likes to buy me boiled corn when going to the cinema for a movie. Sometimes they brought boiled peanuts too. Those where the days, now that they are old  and have no strength to take me to the cinema no more. Perhaps I can take them to the cinema. This is the life of cycle. I hope and pray for them to have good health and live longer. Papi, Mami wait for me to come back next year, how nice if they can hear me now. I think they are in the middle of their sweet dreams now. Alright! back to the corn.
Corn is very healthy and delicious. The best thing is now every where at the store is having great deals. I'm getting these corns 4 for a dollar. Beware of heartburn when eating too much corns. It is difficult for digestion. Completely bite before swallow.
Boiled Butter Sweet Corn

   Ingredients   : 

   5     large sweet corn ( i used combo corn, yellow and white)
   3     tablespoon butter ( i used planta majerin)
   3     tablespoon cream ( i used half and half )
   1     tablespoon sugar
   salt to taste


    Method    :

    Husk and clean corns, place the corns on the plate and steam for about 15 minutes. Remove from 
    steamer and leave it chill for a while. Use hand or knife to scrape down kernel from cob and set aside.

    Heat up a pot on medium to low, melt butter add corn and sugar. Leave it to cook for about 15
    minutes.

    Adjust the heat to low and add in the cream ( i used half and half), stir it and let it cook for a while.

    Add salt to taste and cook for another 10 minutes or until soft and creamy.

    Serve immediately.

Peanut Butter and Cheese Stuffed French Toast

Here I present to you the most fulfilling and very nutritious breakfast, Peanut Butter and Cheese Stuffed
French Toast. To be honest, this is not my breakfast, hehe!! it is actually my tea.
Can't believe it I'm actually craving for breakfast at the noon time. Luckily I have plenty of breakfast ingredients in my  pantry and I can say my house all year long always has milk in my fridge. It makes my day, and I love it.
Peanut Butter and Cheese Stuffed French Toast
   Ingredients   :

   2    slices white or whole grain bread
   1    tablespoon milk
   2    eggs
   butter to cooking spray

   Method    :

    Into a bowl, beat the eggs, add milk. Mix and stir well.

    Heat a none stick pan on medium heat, melt the butter in the pan or use cooking spray to grease the 
    pan before putting in the bread.

    Dip bread into the egg mixture until both sides coated and covered with eggs. Don't leave the bread 
    slice in the egg mixture for too long.

    Gently place the slice bread on the frying pan and cook until it it turns golden brown. Flip and fry the
    the other side of the bread until golden brown.

    Serve immediately with maple syrup or confectioners and don't forget the milk.

Baked/ Grilled Honey Chicken Wings

My favorite of the favorites, chicken wings. It is definitely my first choice and I will never get tired of eating it. I still remember when I first saw my friend from Washington who uploaded this yummy and delicious chicken wings on FB, I wanted to beg her for the recipe. It was so juicy and tempted when looking at the picture.

I really want to Thank my friend, Lynn for sharing this wonderful recipe with me. I omit one of the ingredients and glaze some honey before putting it to bake. I can say the taste of this chicken wings reminds me of Ah Wah chicken wings from Jln Alor.  I'm very happy, in the future or from time to time when I crave for Ah Wah grill chicken wings  Hahaha!!!  I can actually make something similar to it. Wow!!!

Baked / Grilled Honey Chicken Wings

   Ingredients   :

   15     chicken wings, washed chicken
   7       bulb shallot, peeled and cut slice
   6       cloves garlic, peeled and cut slice
   1/2    ounce ginger, peeled and cut slice
   1/2    teaspoon salt
   1/2    teaspoon pepper powder
   31/2  tablespoon sugar
   5       tablespoon light soy sauce
   1/2    teaspoon dark soy sauce
   3       tablespoon honey


    Method    :

    Pat dry the chicken with paper towel, marinate chicken with all the ingredients for 8 hours or more ( i 
    leave it in the fridge for overnight)

    Remove the marinated chicken wings form fridge and and preheat oven to 400 degrees F. 
   
    Brush wings with honey before putting in the oven to bake. Let it for about half an hour and turn to 
    the other side and let it bake for another 20 minutes.

    Serve while its hot an don't forget to drink lots of water. Enjoy!

Banana Fritters (Kuih Kodok)

Kuih Kodok is a very traditional Malaysia dessert. It is very tasty and is a must try dessert. This dessert are mostly found at the morning market, night market or even sold at the roadside malay stalls. It is very sweet, smooth and tempting. I bet you will ask for more after having the first piece. A very simple way to do and yet delicious dessert. This is definitely a good way to use up the ripe bananas. 
Banana Fritters ( Kuih Kodok)

   Ingredients   :

   3 - 4    ripe banana or 11/2 cup smashed banana ( slightly smashed only)
   1         teaspoon baking powder
   2         teaspoon sugar
   1         cup flour, sieve
   1/2      water, add more if necessary 
   pinch of salt
   oil for deep fry

   
    Add the flour into a bowl, mix with sugar, salt and water. Pour in the smashed banana and baking 
    powder.

     If the batter is to dry, add water. Add 1 teaspoon at a time until the batter becomes sloppy.

    Heat the oil. When the oil is ready scoop up the batter with a metal spoon. Gently drop it into the hot
    oil. One scoop at a time. 

    Fry until golden brown or cooked. Pick it up from the wok and drain out oil in a colander.

    It is ready to be serve. My kids like to sprinkle some icing sugar on it.

Fried Wantons

I believe wanton is everyone's favorite, no matter it is in soup ore deep-fried. This is a light meal and very easy to prepare. I like to make this whenever I throw a party at home or going to the parks. Try it, you will love it.
Fried Wantons

   Ingredients    :

   300    g   ground pork
   50      g   jicama, cut small cubes
   1             sprig cilantro, trimmed and mince
   1             clove garlic, mince
   1             teaspoon sugar
   1             teaspoon salt
   1/2          teaspoon corns starch
   1/2          teaspoon pepper powder
   1/2          teaspoon soy sauce
   1/2          teaspoon vegetable oil
   drops of sesame oil
   wanton skin
   oil for frying

    Method   :

    Mix and combine all the ingredients and let it marinate for about 30 minutes.

    To wrap the wanton is to scoop a teaspoon of the filing in the centre of the wanton skin and gently 
    close it tightly. Continue to wrap all the filing until everything is wrapped.

    Fry the wanton in hot oil on medium heat until golden brown or cooked. Remove from wok and drain

    Serve with your favorite chili sauce.

Cheese & Fruit Kabobs

Fruit Kabobs will be everyones favorite at a party especially during this season, summer. At the request from my daughters i made this yesterday for their birthday party. Why they, is because my eldest Julia and Jocelyn's birthday falls on the same week therefore we might as well celebrate it together.
 I use mozzarella instead of all fruits on a stick. The fruits was so fresh and sweet plus the mozzarella was gummy and delicious, it makes a great matching.

There isn't particularly what is the ingredients, all you need is to pick your favorite fruits or any of the fruits of the season and stick it on a stick. Trust me that will make a good combination. No one can refrain from this. Thumbs up!!!
